🧂Lower-salt version: a quarter of the salt in the spice rub, half the pickled onions, and fresh fish. Taste at the end and squeeze more lime before reaching for salt.
🐟Buy fish and seafood fresh at the wet market, and freeze it at home if it is for later in the week. Frozen fish and prawns from the shop are often soaked in salt water or phosphate, which adds a lot of salt.
01Prepare your fish taco bowl fixings of choice. Since the fish cooks up really quickly, prepare any bowl fixings before you start cooking - guacamole, poblano ranch dressing, shredded cabbage, cilantro lime rice. Set aside for easy assembly.
02Season the fish: pat the cod fillets dry with a paper towel. Combine all the listed spices in a small bowl or jar. Sprinkle over the fish, covering all sides in a generous dusting of taco seasoning.
03Sear the fish: add the olive oil to a nonstick skillet over medium-high heat. Once the oil is hot and shimmering, add the seasoned cod. Cook 2 minutes, then flip and cook 90 seconds to 2 minutes longer, until the cod is flaky and cooked to your liking. Thicker portions may need slightly longer. Transfer to a plate and squeeze the lime juice over the top.
04Assembly: build the bowls as desired - a base of cilantro lime rice and shredded cabbage, then the seared fish, pico de gallo, guacamole, pickled red onions and a drizzle of poblano ranch dressing.
